Session: Smoke & Grill Trends - Evaluating Different Species of Smoke, Regionality, and Trends

Dr. Jason Behrends lives in Fredericksburg, Texas and leads Business Development for Food Service Smoke and Grill at Kerry. He has been with Kerry since 2018.  Along with his work with Kerry he spends his spare time as an artist and was recently featured in the 2021 Destig addition of Best of 2020 Artists. With the passion for Culinary Arts and food he pursued certification by RCA in 2006. Prior to his work at Kerry, he was Director of R&D for PDM Business Strategy for Tyson Foods.  He also held roles at Tyson Foods (2004-2007 & 2011-2017) in optimization, food service development and project management.  Before heading back to Tyson Foods in 2011 he was an assistant professor at Mississippi State University in the Department of Food Science, Nutrition, and Health Promotion. In addition to his extension, research, and teaching responsibilities, he coordinated the Culinology Program and co-coordinated the Meat Judging Program at MSU. Dr. Behrends has been involved with RCA since 2006.  He served on the RCA Board from 2013 – 2021 and as President from 2017 – 2019, Secretary from 2015 – 2017.  He has also served on multiple RCA committees He believes that through culinary arts and science we can elevate new products to achieve greater consumer acceptability and heighten the experience.
