Fermentation generates an array of compelling flavors, and textures as well. It can elevate the plainest of foods into flavor sensations, such as soybeans into soy sauce or milk into cheese. Its uses in culinary traditions around the world are incredibly diverse, and yet visionary chefs are experimenting with exciting new applications of fermentation. This presentation will seek to demystify underlying fermentation concepts, highlight a few examples of innovation, and provide an opportunity to address participants' specific questions.
